Also known as Kaffir lime,makrut, or magrood., the distinct, hour-glass shaped leaves are an invaluable seasoning in many Asian recipes, including Thai coconut soup. The small, bumpy green fruit is sour and highly aromatic. The rind used in curries, chili pastes, Asian sauces and marinades. The scant juice is used in drinks but is also considered to have medicinal properties.
